It’s a common refrain among older generations — food just doesn’t taste the way it used to!
There may be some truth to that. Mass production and processing make consistency a priority over flavour. Chickens are fattier, tomatoes more watery, and regulations removed many beloved artificial flavours and colours.
And our taste buds naturally dull slightly as we age, though food is also more diverse now, with globally inspired flavours. Farmers markets and artisanal foods offer higher quality options.
While some processed, sugary, fatty foods still hold childhood nostalgia, much of the food decline is perception.
With more awareness of what we eat, perhaps we can regain some of that old-fashioned flavour.
